15-minute meal!

Quick blog post here to remind us that we can still eat a meal that is healthy, quick, and delicious!

If you forgot to take something out the night before, get tilapia out of the freezer on your way to work and it will be defrosted when you get back.

Tonight’s meal was tilapia with brown rice, tilapia, and green beans. This meal was for two since my kids don’t eat tilapia yet.

For the tilapia, heat up a tablespoon of olive oil on a skillet. Season the two fillets with salt, pepper, garlic powder, or Adobo with pepper. Brush both sides with olive oil.

When the oil in the skillet is hot, cook the tilapia about 5 minutes each side.

Meanwhile, heat a cup of water in a pot . When it boils, add the green beans and cover. Steam for 5 minutes, then drain. Season with a little bit of butter and salt if you would like.

I used Ben’s long grain and wild rice that cooks in the microwave for 90 seconds.

Set it all up on a plate and you are ready for dinner! I also made a quick salad with lettuce (pre-washed), tomatoes, avocado, feta cheese, cucumbers, and dried cranberries with sunflower seeds, seasoned with white balsamic vinegar.
