I was trying to think of some witty name for the blog post but really couldn’t come up with anything, so did the next best thing. I gave it a name that tells you exactly what the post is about!
Bowls are always very fashionable in healthy fast food restaurants and just in general. You do have to be very careful with what you get in them since you can easily break 1000 calories if you are not watching what goes in. I decided that I could make my own calorie-controlled bowls at home and ground turkey goes great with many things. You can also use ground meatless options.
Currently, I am obsessed with two recipes I will share below. The first one is an old one from my 21-day fix days that I adapted for an easy bowl recipe and the second one is Greek-inspired. I have not been able to get my kids to eat it but will keep fingers crossed that one day they will! Each recipe has about 4 servings and takes about 20-30 minutes to make (depending on how good you are peeling and chopping!).
Turkey and veggie bowl
Ingredients:
1lb ground turkey
Vegetables: 1 large sweet potato, peeled and cut in small cubes, 1 yellow or red pepper, diced, 1 yellow onion, diced, 1 teaspoon minced garlic, fresh parsley (optional for garnish)
Spices (to taste): salt, pepper, garlic powder, basil, cumin
Pam spray
Shredded cheese of your choice – I like mozzarella
Brown rice, sour cream
Instructions:
- Cook ground turkey on cast iron skillet that was sprayed with Pam until it is mostly browned. Season turkey with all the spices while you are cooking it. Make sure skillet is hot before putting meat on.
- Add onions and cook for 3-4 minutes. Add the sweet potato, pepper, and garlic. Season again.
- Cover and cook for 10 minutes on medium heat or until sweet potato is tender.
- Taste the dish and season more as needed.
- Sprinkle cheese on top before taking it off the stove and cover it for a minute or two, so it melts.
- Serve in a bowl with brown rice and sour cream (I use light or fat-free). Sprinkle fresh parsley on top.
Greek turkey bowl
Ingredients:
1 lb ground turkey
Vegetables: 1 yellow onion diced, 1 pint cherry or grape tomatoes diced, 1 cucumber peeled and diced
Spices (to taste): salt, pepper, garlic powder, dill
Feta cheese, 1 teaspoon per bowl
Tzatziki sauce (to taste)
Brown rice
Black olives (optional, I didn’t use them)
Pam spray
Instructions:
- Cook ground turkey on cast iron skillet sprayed with Pam until mostly browned. Make sure it is hot when you add the meat and season it well.
- Add the onions and cook for another 3-5 minutes. Taste the mixture and season more as needed.
- Create each bowl with brown rice, turkey mix, diced tomatoes, diced cucumbers, and 1-2 scoops or Tzatziki sauce. Add olives as well if you like them (I don’t). Sprinkle feta on top.
- Enjoy!
Pro tips:
- I love to use Ben’s Original 90 second brown rice for these recipes, only a minute and a half to make in the microwave and tastes great!
- I use the pre-made Costco minced garlic, which also saves time
- You can use the left over turkey and veggie mix to make wraps
- If you have help at home, like a nanny or house manager, ask them to chop the veggies ahead of time for you!
