Seasonal ingredient spotlight – avocado

I am finally starting to feel like the warmth is here to stay and in hopes that this is true, I am writing a very summery blog post.

Avocados are now selling at $1 per fruit near me and that usually is the signal that they are in season since they can sell anywhere from $1.50 up to $2.50!

In the past I have shared ways I have used avocado as a substitute for mayo in egg and chicken salad but this blog post will focus on snacks.

1. Dip platter. Hummus, tzatziki, mashed avocado… Even my children like this one! It and been a fun snack to make. I like to do the trip above and use Stacey’s multigrain chips, yellow and blue corn tortilla chips, and veggies (tomatoes, cucumbers). Easy, healthy, and delicious!

2. Avocado, cucumber, and tomato salad. It’s my own version of an Israeli salad and so refreshing! I cut all the ingredients up in small cubes and mix them together. I sprinkle a little sea salt and a few squirts of lemon juice. So good!!

3. Sliced turkey and avocado toast. This can actually be a quick lunch or snack if you make them on crackers. Use either whole wheat or multi grain toast, spread avocado on it after toasting it, and layer some sliced turkey. You can also make them as tiny snacks by using any cracker you like.
