Time-saving Costco finds!

I don’t know about you, but I am still trying to get back into the swing of things after returning from Spring Break. Not to mention that one of my children had a full TWO weeks off from school, which threw me off as far as routines go even more!

As I try to get everything back in order, it has been helpful to have a few food items that I can easily rely on to stay on a healthy diet. If you have been following me on Instagram, Facebook page, or the blog, you know I love to meal prep, including my breakfast and work lunches. I don’t know always have time to do this, so here is a short list of items that save me in a pinch. As usual, Costco coming in for the win!

  1. Veggies Made Great – Spinach Egg White Frittatas: not the same as my very own egg muffins but they come close! They come individually wrapped and each one is 70 calories with 5 grams of protein, 1 gram of saturated fat, and no trans fat. I heat up 2 in the microwave before I leave the house and eat them while I drive to work. They come in a box of 20 and I always like to keep one around for times when I don’t get to prepping my breakfast or if I have a short work week and don’t meal prep at all.

2. La Colombe Cold Brew – it finally feels like it is getting warm and I LOVE iced coffee when the weather permits. During my last Costco run, there was a sale for 2 bottles of La Colombe Cold Brew for $4.99. I wish I bought more! No added sugars. If you dare, you can drink it black. I like to add a splash of half and half. I usually make my own iced coffee (if I remember) but this offer was too good and convenient to pass up.

3. Grape tomatoes – my favorite snack for work! Costco has the large box and they keep longer than you would think just sitting in your counter. Grape tomatoes are great alone or you can use them to dip in hummus, instead of using pita chips.

4. Kind bars – I typically avoid granola or protein bars but I love to keep these around in case I need something a little more filling that tomatoes or a clementine for a snack. I also love their kid version for my children. They have lots of flavors but I prefer the dark chocolate.
